What you lose
Search. That is the real cost and it is not small. If you cannot remember roughly when you wrote something, you will not find it.
What you get
A thing that is finished when it is full. There is no backlog, no unsorted inbox, and no notification that your notes are out of sync. The constraint that makes it worse at retrieval is the same constraint that makes it restful.
